The Studio Allston Hotel is partnering with Craft Food Halls on its 10th location, which will include a focus on the sous vide method of slow-cooked cuisine.

Craft Food Halls is scheduled to open the 8,000-square-foot location on March 21. The Allston location is the first food hall with a sous vide focus in the U.S., according to organizers.

Owned and operated by Melissa and Doug Ferriman and Gardy Desrouleaux, Craft Food Halls partners with commercial developers as an amenity at locations within suburban office parks and new developments such as Dorchester’s Southline.

The Allston location, its first within a hotel, will debut a “Sous vide Spectrumization” cooking technique, using low temperatures and lengthy cooking times to retain flavor and moisture. The menu will include pub food and a rotating beer selection for a self-serve beer wall.

The 8,000-square-foot space includes an outdoor courtyard planned for live music and events.

The 117-room renovated hotel reopened in 2018 in a venture led by The Davis Cos., Spot On Ventures and Highgate Hotels, adding local artwork and updated decor to the 1960s facility at 1134 Soldiers Field Road.

The property is part of a site approved for future redevelopment by The Davis Cos. in which a new 195-room hotel and 76-unit condominium project would replace the existing hotel.
